Bionutrition

Research Food Service: Although we can't promise gourmet cuisine every day, we do care about our subjects' nutrition and dining comfort.  Meals are provided for subjects who participate in studies requiring nutritional control.

A "research" meal is one with carefully weighed and prepared foods that are controlled in one or more components. For example, the meals for one study included foods low in biotin (a B vitamin) to permit us to study the body's reaction to a dwindling nutrient supply.

Researchers sometimes ask such complex questions that the diet cannot be provided by food, but must be supplied as a liquid formula. For example, a doctor wanted to know how a person with diabetes utilized fructose (a sugar found naturally in grapes), and asked that all the carbohydrate in the diet be in the form of this sugar. Rather than eat six pounds of grapes every day for a week, his subjects cheerfully consented to "drink" their formula diet for seven days while he measured their blood sugar control.

Whether the meal is comprised of food or formula, our congenial staff serve it in the comfort of our "dining" room on the second floor of the Medical Research Facility or in the subject's room on 3 south (left).  We also pack meal "to go" when research subjects are unable to return to our unit for their meal.
